Okay, so my favorite thing in the world is ROASTED CHICKEN. It’s legit the best! What other food can you think of that is already made, healthy, and can turn into a million recipes? None? Yeah, I know cause that food is roasted chicken!
So earlier this week I was craving chicken salad so bad. Chicken salad reminds me of my Jr.high days, when my best friends dad would make some. It was THE BEST chicken salad ever, and I would beg my friend to tell her dad to send me some for lunch haha. One day, I finally got the recipe and now I put my little twist on it! Hope you enjoy it!
Danis Chicken Salad
1 whole roasted chicken (deboned and chopped into pieces)
1 cup of green grapes (or you can use red)
1/2 cup of mayo
1/4 cup crushed walnuts
1/2 cup of onion diced
3 boiled eggs
1 1/4 cup of green apple
Directions: Honestly I’m trying to make this as simple as I can LOL so excuse my non-chef lingo
1. Debone the chicken and chop the chicken into little squares. Set in a bowl
2. Cut green grapes in fourths, and add that to the chopped chicken
3. Peel your boiled eggs, cut into little cubes. Add to the chicken and grapes.
3. Add the mayo, walnuts, onion, and apples into the same bowl.
4. Mix and Enjoy!
I ate my chicken salad alone, because I try to not eat wheat. BUT if this was a different time in my life, I would’ve slapped that chicken salad unto a croissant for a full on meal! Its literally heaven on earth!
