Okay, so my favorite thing in the world is ROASTED CHICKEN. It’s legit the best! What other food can you think of that is already made, healthy, and can turn into a million recipes? None? Yeah, I know cause that food is roasted chicken!
Chicken salad reminds me of my jr.high days, when my best friends dad would make some for us during sleepovers. It was THE BEST chicken salad I have ever tasted and I would even beg my friend to tell her dad to send me some for lunch. One day, I finally got the recipe and now I put my little twist on it! Hope you enjoy it!
Danis Chicken Salad
1 whole roasted chicken (deboned and chopped into pieces)
1 cup of green grapes (or you can use red) chopped in 4ths
1/2 cup of mayo
1/2 cup of red onion diced
3 boiled eggs chopped
1 stalk of celery chopped
1 1/4 cup of green apple chopped
Black Pepper + Salt to Taste
INSTRUCTIONS: Debone the chicken and chop the chicken into little squares. Set in a bowl.
Cut green grapes into fourths, and add that to the chopped chicken. Peel your boiled eggs, cut into little cubes. Add to the chicken and grapes.
Add the mayo, onion, celery and apples into the same bowl. Mix and Enjoy!
You can serve with crackers, on whole wheat bread or even lettuce!
